Kind of weird how it goes 15-20 minutes with nothing and then goes up by 20 all at once. Maybe so many new orders are being placed the website can't handle all of them.

The pledge ticker is just a friendly looking interface. It likely pulls from the actual ordering system, but is certainly separate from it. Its unlikely it updates every time an order is placed during times of high load, and instead has a timer of sorts that says to fetch the order count every 5-10 minutes or something. This keeps good server performance. You could also be pulling cached versions from your regional CDN. You almost never directly access a website anymore. You instead access the version cashed at regional content distribution networks. These are geographically closer to you and through a variety of means, provide better end us er performance than if everyone were accessing one server. Normally this is invisible to the end user but for things updating by the minute, you can tell. Sometimes the cached version will be out of date until the CDN updates its version, which it does at timed intervals. try ctrl+f5 to grab a new non-cached copy.
