So I haven’t watched the movies in a while (like a long time), but do the movies ever give an an explanation for why optimus’ design changed?

 

Depends on the continuity, but Ravage is usually a constant if I'm not mistaken.

 

I don't think there's an (official) answer to this, and it also depends on continuity. But we do know about a few.

@Kaleb Hart already mentioned Ravage. With the toys there was a combiner formed by Silverbolt, Ironhide and Prowl and those were hinted at being the G1 versions. The Botcon comics also had Arcee, Rodimus, Skywarp and Cyclonus, In an alternate Botcon timeline Swoop was also suggested to still be alive (The Veteran), and BW2 and Dreamwave had Starscream survive.

You're right. Grimlock as well.

And there's another Prowl, Prowl II, who thinks or either is G1 Prowl. He's in many ways more G1 Prowl than the Magnaboss version. If I remember correctly, the Binaltech story somehow explained this through Prowl having a duplicate body (the blue one).

So we have at least:
- show: Ravage
- toys: Prowl (2x) Grimlock, and possibly Silverbolt and Ironhide
- botcon: Rodimus, Arcee, Skywarp and Cyclonus, with possibly Swoop in an alternate timeline
- Dreamwave and BW2: Starscream.
