They have bull fighting because the matadors still have a reasonable chance of actually getting out of the way. A bull may be fast, but they don't turn all that well once they are fully charging. When I was younger we had cattle, and a particularly ill tempered bull. Don't get caught in the "Prometheus School of Running Away from Things"

I do like to imagine if this was animated that those are actually the bull horns and that the magically change size in an awesome transformation sequence.

 

Now that you made me think about it, putting a Bayverse Sidewipe head on this figure and painting it silver would be pretty slick.
Or a black repaint, a HotRod head on it and call it the Charolais.. because it is french breed.
