Einstein bot from the third TF movie has hair and a mustache. Some may say his hair is not really hair but optic fibers, but you know what, whatever it is made out of IT'S STILL HAIR! So many G1 bots had mustaches and beards. But why? Why would a TF have or need hair?

Simple answer: Why the hell not?

Expaned answer: Transformers are, naturally, already FAAAAAAAAR older than humans, so when it comes to explaining the older aged TF's apart from the younger ones off of appearance alone, it can be difficult. This is one way facial hair works, to convey a sense of age even for somebody part of a really old race of robots (I.E. Jetfire)

Also, facial hair such as long beards can sometimes be associated with really evil guys, so that's why G1 Scourge and to an extent Unicron have facial hair. And to an even further extent SG Rodimus.

He wasn't a millions-of-years old robot that turned into a kind of machine. He was organic, and it's easier to make organic characters older through the use of things like wrinkles.

Also, I said facial hair COULD be used as a method of conveying a sense of age, not that it was REQUIRED. Besides, going back to your example of Einstein-bot, it's obvious that his head is supposed to look like Einstein, and so that requires something to stand in for his well-known hairstyle. No other TF in the movieverse has hair at all.

For the same reason they have mouths and teeth.

I chalk it up as this:

some things just come with sentience.

It's not all that important in the grander sceme of things.

It's actually totally random coincidence. It's not hair at all, just certain physical traits that we humans just happen to identify as "facial hair"... Transformers have an extremely diverse array of physical dimorphism, hence we have faces that range from Megatron, to Starscream, to Bonecrusher, to Frenzy, to Jazz, to Bumblebee, etc... some have mouthes, some have multiple eyes, some have a face full of fangs, others faceplates or spines or odd crests. So-called "hair" is just one more diverse feature for them.

Because they need to protect their processors from random flying things and diseases? Those beards must make for amazing Energon sponges.

Great, now I'm stuck wondering if characters like Optimus and Soundwave and other faceplate guys suffered from "beard envy"... When Bumblebee was reformatted into Goldbug, did he ever think wistfully that he had "missed his chance"...? Could Arcee have grown facial hair if she wanted to...? Does Alpha Trion sit around picking energon crumbs out of his beard...?

See here: "Facial hair" at TFwiki.

It doesn't say what purpose it serves, beyond indicating age, but they haven't really touched on it enough in the story.

My theory, in the G1 continuity at least, is that the Quintessons built some Transformers to have the capacity to "grow" facial hair and have knowledge of what it for the purpose of being more relatable to species who could grow facial hair.

In the movie universe, well, that's a little harder to explain! Perhaps some Transformers just thought it looked cool?

    Why do transformers have gender?

Transformers have beards because it gives the characters a little more uniqueness and personality. You see a tf with a beard and you go "oh! Old guy!" As for an in universe explanation... do you really need one? I mean transformers is a cartoon after all. It doesn't exactly pride itself on realism.

The bay movies have been interesting with these features to show us age, I've never really cared though.

Because Transformers are a human creation and as such reflect our humanity - might as well ask why (most) Transformers have a face with two eyes, a nose and a mouth, or two arms and two legs.

Why do most Transformers have 5 digits on their hands? Why do they have legs, when a race that advanced could simply have antigravity (WFC Megatron is a hovertank, for example)? Why are most of them bipedal? Why do most have human-like faces?
You could go on asking stuff like this forever, and the answer is simple: it makes them look more like us.
    Edit: Carl nailed it IMO.

It's just coincidence that the old robot got a stache looking blade as part of his head design. It's also coincidence that younger robots got young voices and that female robots wear lipstick.

It's just characterisation,Optimus is old enough and so is megatron but they don't have beards,it seems some are capable of growing metallic pieces and others aren't,same in the human race some men can grow beards and heavy ones or others can grow llight ones or just stubble, there's a range of things, when i seen facial hair on a g1 bot they looked menacing in decepticons cases and wreck gars and in alpha trions case it looked wise.Jetfire was seen to be able to age in his movie spotlight comic from small beard to the one we see in rotf, jetfires look was cool but he was voiced by the wrong person imo.Wheeljack will be cool I think, chris latta isn't here to voice him, so lets see who does, i reckon he'll have a german accent, german alt mode, german scientist head, makes sense.
