I never paid much attention to demos, so how do the demos usually work? Is it like you play up to a certain part of the game and then it ends? Would previously unheard of Pokémon show up? Can someone theoretically grind their starter up to its final evolution?

The demo takes place in some locked location with a storyline specific to the demo. You most likely won't be able to just catch anything; in the ORAS demo you could only get the starters and the Glalie handed to you.

There might be a new Pokemon they announce when the demo comes out similar to what they did with Mega Glalie/Steelix but other than that it'll just be known Pokemon

It was just a new trailer for the Sun/Moon anime. No game news.

With the ORAS demo... It actually started out giving you all three starters at level 35 and pretty much forces you to evolve them to their final evolution and then gives you all of their mega stones to play around with. Beyond that, there isn't any point to grinding, as the demo will reset them to level 36 on any subsequent playthrough. There were a few different mirage islands you could be sent to after that first mission, but it was all very self contained and each playthrough of the demo only takes a few minutes. It didn't really have any surprises.

They've actually already announced the special Pokemon that you can transfer to the full games from the Sun/Moon demo (like you could Glalie/Steelix with the ORAS demo), which will be Ash-Greninja.

I think they won't be version exclusives, but instead appear depending on whether it's day or night. The entries on them state that Rattata adapted to a nocturnal lifestyle to avoid their diurnal predator, so when the sun's out, you see Yungoos, but when it's gone, the Rattata come out.

Most likely not seeing how they're not just a random pokemon but part of the trials itself, it'd be like capturing a gym leader. They're merely just boss battles and most likely you'll just get something from them after, such as a totem to present to the trial captains so you can move onward to battle the Kahuna of said island.

Makes sense; the Totem Pokémon probably belong to the Captains, or are affiliated with them, and serve as bosses, so we don't capture them. The ones we've seen so far match up to the type preferences of the Captains in turn; Gumshoos/Raticate with Ilima, Lurantis with Mallow, Wishiwashi with Lana.

We don't have gyms anymore, but these trials do emulate them with how the Captians/Kahunas use a certain type.

Oh yeah, that would be cool.

I think Steelix already has the Steel-type. Did you mean ice?

Oh man I just realized the demo is only two days away... Really excited for this! Don't think I've been this excited for a Pokemon game since HeartGold and Soulsilver- even if they're doing a lot of new stuff, you can really tell how much love Gamefreak has put into these games and how they're trying to celebrate the series here.

I'll be trying to avoid story spoilers and information about the Alola region and its environments, but I will gulp up every new Pokemon they throw out there- one of my favorite aspects of every new generation is planning the team I'll be using out of only Pokemon from that generation.

Demo character is just the main protagonist from the regular games, who happens to have some of the same Pokemon as Ash.
Screenshots indicate that the Pikachu won't have the same move set as Ash's, and the trainer you play as is literally the same in appearance as the regular protagonist that's been revealed.
Not sure if that's even spoiler-worthy, but I can respect the people who wanna go less than one more day without knowing what Pokemon and moves you get in the demo.
