Seeing how Pod Racer Transformers can be possible due to Star Wars crossovers, do you want to see one be made?
The cables would probably be extremely flimsy. The transformation would also be a huge pain to work out. Three pieces, all seperate, connected only by cables and energy?
Most podracer toys had a piece of plastic or metal connecting the engines other than the energy beam. I'm sure they can use clear plastic rods to hold the figure together without making an awkward transformation.
Even with the extra support beams, there isn't enough material between the pods and the engines to really "transform." My guess if something like this were to happen, you'd have to disassemble the pod and engines, transform them separately, and then reassemble them into robot mode. So I don't really see this happening. And I hope not. The fewer toys out there to remind one of Phantom Menace the better.

A pod racer has three parts, even with the addition of a piece of plastic or metal connecting them, it'll look awkward (like movie 2007 Voyager Megatron's wings of ice) There are one piece podracers though, but I doubt they'd take those obscure ones in favor of Anakin's or Sebulba's
I actually like the idea. The pods could unfold into an arm/leg each, and the Pod itself could lock in between the two in a sort of Energon Optimus Omega Supreme set up. The head/torso could come in the drivers seat portion, and the energy cables could function akin to how they function on Shockwave or something.
I don't think it would be entirely impossible, you'd just have to move the engines closer together, take the tethers away, and maybe scale up the cockpit a little to make transformation possible. Of course, the SWTF line seems more open to hurting the bot mode for an accurate vehicle, rather than the other way around, so yeah...
Yeah, maybe the seperate engines can transform into DUM Pit Droids that can combine with the cockpit to become a giant mech based on the pilot.
