I recently picked up Canon SD1000 and am fairly happy with it. Either b/c of the holidays or b/c Canon released a small batch of new point-and-shoot models, the SD1000 has gone from $250 original retail to around $150 - $180 on sale. In general, my amateur and pro photography friends recommend Canon, except for one guy who recommends Nikon equally as much. My last camera was an Olympus and I didn't think it was all too great. http://www.dpreview.com/ is a good place to get info on digital cameras
I have a kodak easyshare c663 and ive been very very happy with it this year from close ups to shooting videos.. awesome
If you're just going to use it to upload on YouTube, a mini-DV camcorder should be more than enough. You might also want to get one that has optical image stabilization (since I'd hate to see another shaky vid on YouTube).
Most now a days connect via USB or firewire into the PC and come with software to capture your videos. From what little I've played around with one, it wasn't too terribly difficult to capture clips to the PC, but the capture had to be done in real time. I believe most cameras are that way.
Heres a nice cam that wont cost you a fortune, also has a YouTube capture feature http://www.casio.com/products/Cameras/Exilim_Zoom/EX-Z77BK/
Oops sorry about that.. My friends have a FLIP they got from walmart for 150 and they love it. It plugs right into their computer and come with editing capabilities.. Might be worth checking out! http://www.theflip.com/
