I am trying to figure out how many supreme class figures have been released. these are the ones I can come up with:

    -Unicron
    -Primus
    -energon Starscream

not sure if supreme class(or considered supreme class)

    -energon metroplex
    -energon omega supreme
-remake of fortmax (can't remember the new name)

if there are any others or if you have a definate answer for the three unknowns that i listed please let me know.

You could say Omega Sentinel too, although he is just a repaint of OS.

    Ebay:
There was also the giant Animated Optimus Prime.

There was no remake of Fort Max and the Cybertron Metroplex was a Leader Class.

That isn't truly a Supreme, it's just called a Supreme by Takara.
It's just a Leader Class with an accessory. What I consider a Supreme is a toy that meets the size qualifications of that size.

With the wings, it does. Look at RID Air Attack Optimus Primal. Really not all that big, and he's a Supreme.

Optimal Optimus/Primal Prime. He was the first Supreme class toy.
