Shirou can't project without gaining the skills, it's not a switch he can turn off, all projections come with the abilities and history. Plus he's literally plugged to Archer's arm. The attack might be stupid, but it's still Archer behind it when it comes to execution.

It's not an alternate version, they took the OVA footage, added some extra bits and arranged it differently, it has like 30 minutes less of runtime, so it's not a drastic change.

I definitely liked the episodes more, but that's probably because I saw them first, and I prefer the format to begin with. There's clever changes, so it's equally as valid.
