I don't know about a complete step by step but I try outline as much as I can. Using templates is important I find it, I made them out of thin card. The actual parts of the rhino is made from styrene sheets. I started out with the head only. I just drew the head of the rhino out on thin card. Once Im happy with the size, I made another template of the head without the horn, this will create the out-est layer, I added eyes as well.

The inner body bit (pinky part) that rotates is again based on the first rhino head template but extended. There are about 5 styrene parts, 4 are the same without the horn and ears while 1 has the horn and no ears. 2 of the 4 are longer than the other inner body parts, this is where the gun will fit in or you could drill this. All these are layered together.
